Pickled Tomatoes

 

Pickled tomatoes are very easy to make at home. I’m going to give you an old Russian recipe. This recipe is really great if you like to have a fresh pickled tomato sandwich in the middle of the winter.

Here are the ingredients for making pickled tomatoes:

  1. six onions thinly sliced
  2. 1 tablespoon cloves
  3. 1 tablespoon celery seeds
  4. 1 tablespoon mustard seed
  5. 1 tablespoon ground mustard
  6. 1 gallon green tomatoes thinly sliced
  7. ½ cup salt
  8. 3 cups brown sugar
  9. 3 cups distilled white vinegar
  10. one half lemon sliced
  11. one red bell pepper thinly sliced
  12. two red bell peppers means

 

To make pickled tomatoes get out a large bowl and put in your tomatoes and onions. Sprinkle them with salt and refrigerate them overnight.

In the morning pour cold water over the tomatoes and onions and leave it for one hour. Now get out a small cheese cloth bag. Put in your black pepper, cloves, allspice, ground mustard, and mustard seeds.

In a big saucepan add your vinegar and sugar and your tomatoes and onions. Now put in your cheese cloth bag the minced red pepper and for sliced lemon. Now bring the mixture to a boil and then let it simmer on low for about one half hour.

Now take your still warm sterilized jars and fill them with the tomato mixture leaving ½ inch room from the top of the jar. Screw on your lids and make sure you have a tight seal and place them in boiling water that is 1 inch above the lids for 15 minutes. Make sure that you have a good seal after boiling by pressing down on the center of lid in ensuring it does not move. Congratulations you have just succeeded in making pickled tomatoes.
